I don't do as much voice dictation while I work as I'd like. I find myself to be fairly keyboard-first. I'm usually glad when I do hold down the hotkey and start yapping. All the rambling without overthinking what I'm about to type usually gets at more of the good details and generally in a fraction of the time.

I'd like to give Handy a try at some point, but for now my daily driver is MacWhisper. It's one-time purchase, works offline, and has tons of features. I'm always really happy with the dictation results too.
